At a loss and don't know where to turn with closing taking multiple months

To make a VERY LONG story short-ish, I put an offer in on a house back in September. The seller had 14.99 acres but split the land so we get 4 of them. Perfect. Loved the house and didn't need that much land. Closing was supposed to be Nov 22. Because they split the land, a new survey had to be done (not at my cost, don't know who paid for it) and we assumed it was being done in that 2 month period. Told our apartment complex we were leaving. Paid a big ass fine to end the lease early and put Jan 5 as our last day. Nov 22 rolled around and no closing. Got extended to Dec 13th (Friday... should have known better than to close on Friday the 13th) and no closing. I was going to visit family for Christmas and we were stuck, so when the seller proposed pre-possession we were hesitant but said yes because we would be homeless if we didn't. Moved everything in and now the county is saying we aren't going to be able to close until 1/31 when my rate lock goes away on the 27th... my credit report also expires at the beginning of Feb. What happens if something shows up that wasn't there before (I don't think it will) and they say, "Nope, never mind, we can't do the loan anymore?"

So, my question is, the seller's agent proposed "selling" us that 10.99 acres and we can close, but I told my agent I am NOT paying extra for it. Then we wait until the county gets their shit together and gets the survey done and we sign a paper that says the buyer of that land pays the seller. I'm not quite sure that's a good idea so any suggestions are welcome. Hopefully I explained it good enough. I'm frankly tired of the bullshit, dealing with my dad being in the hospital in a different state, and everything else that comes with life. I just want to own the damn house!
