When is closing official?

If both the seller and buyer sign on a Friday and the buyer has a mail-away closing and wires the money for the sale on a Friday but the funds aren’t received by the title company on Monday and the Alta statement is sent on Monday, does the buyer own the house that Friday or Monday? Wondering because this is what happened to us and the buyer’s agent threatened us with an eviction if we didn’t move out after papers were signed by that Saturday morning. Our agent said they did legally own it when I said “but the funds aren’t even received/processed until Monday.”
